Eggplants with rice

Eggplants with rice

Ingredients:

1 kilo eggplants

1 cup olive oil

1 onion

3 tomatoes

2 cups rice

5 glasses water

Salt and pepper

Preparation:

Saute the onion in olive oil and add the chopped eggplants. Add the ground tomatoes, let them boil for a while and add water, salt and pepper. Then pour the rice and let boil until done.
