Bouréki

For the dough:

1/2 kilo flour

1 small cup olive oil

1 lemon, juiced

1 glass milk

Some salt

For the filling:

1 kilo sweet mizìthra cheese

3-4 tablespoons sugar

2 eggs

Cinnamon or vanilla

Lemon/orange rind, freshly grated

 

Preparation:

Mix all the ingredients for the pastry sheet and knead into a smooth dough. Roll out 3 pastry sheets. Lay the first pastry sheet on a buttered baking pan. Dredge with sugar and cinnamon and place it into a preheated oven for 10 minutes. Bake for a while. Next, spread half of the mizithra cheese on top and lay out another pastry sheet. Dredge again with sugar and cinnamon and layer the rest of the mizithra cheese. Top with the last pastry sheet. Dredge again with sugar and sprinkle with 3 tablespoons of melted butter. Bake the boureki patty in the oven. When it is slightly baked, sprinkle with a cup of milk and continue baking until done.
