Beef tenderloin with caramelised red onions

Ingredients:

1 kilogram beef tenderloin cut in portions

4 tbsp extra virgin olive oil

50 grams butter

3 large red onions cut into 6 wedges

2 thick slices cooked ham cut into cubes

½ cup white or rose wine

2 tbsp honey

½ teaspoon oregano

½ teaspoon thyme

Salt and pepper

Preparation:

Using a pot, stir-fry the meat in olive oil until it turns brown. Add the herbs, salt and pepper and ½ cup of water. Reduce the heat and cook for 1.5 hours. Using a skillet, sauté the onions in butter. Reduce with wine, add the honey, salt and pepper and let the onions slowly boil at a low heat for about 20 minutes until they are fully caramelized. When the sauce is ready, add the ham and remove the skillet from the stove. 
Serve the meat on a big platter with the sauce poured on top.
